Comfort Food

Desserts are not my forte, but are my responsibility for Christmas this year. My husband knows I am dessert impaired…that is cooking them…I definitely know how to eat them!!

Normally when I am responsible for dessert I have these grandiose ideas, I look-up all sorts of fancy recipes, read all of the reviews and comments, imagine baking them and then I know realistically how they will turn out…in the end I buy an already made dessert.

You see I can burn toast; cookies never turn out right, and homemade cake…we don’t even want to go there! So you can understand why frozen pies are my specialty! However, this year I am making 2 desserts that I know will work out well. (Well, I actually don’t know they will turn out, I am just trusting they will!) My best friend’s recipe for Derby Squares and that old stand-by Magic Cookie Bars. (Recipes listed below.)

I am also to bring an Oreo Cheesecake…don’t even begin to think I am baking that…I still want to be invited back next year!!

Food usually triggers strong emotional responses; cookies baking, Christmas party hors d’oeuvre arranged on a tray, pies cooling on the counter. For many of us these word images bring a smile to our face and joyful memories to mind; memories of comfort foods. Not only do we consume them to feed our bodies, but many times we feast upon them as though we were feeding our souls.

God gave the Israelites manna, the bread out of heaven. Christ told us that this bread was of God and that it came down from heaven to give life to the world. He went on to say, I am the bread of life; he who comes to Me will not hunger, and he who believes in Me will never thirst. It is the bread of Christ we should be sharing with our friends and families this Christmas season and throughout the year. Only through Him will we find true joy.

As we celebrate Christmas with our families and friends this weekend, let us rejoice knowing that the Kingdom of God is not a matter of eating and drinking, but of righteousness, peace and joy in the Holy Spirit. And may each of us be filled with all joy and peace as we feast at Christ’s banquet table; filling our souls with the Holy Spirit, our eternal comfort food.

Recipes:

Derby Squares

Mix and press into a 9 X 12 pan:
    1 box yellow cake mix (just the dry mix)
    1 stick of melted butter
    1 egg

Beat for 5 minutes the following ingredients:
    1 box 4X powdered sugar
    1 8 oz. block of cream cheese
    2 eggs

Pour over the cake mix and bake at 350 degree oven for 30 – 45 minutes.  Cool completely.  When cooled, sprinkle with powdered sugar and cut into squares,

Magic Cookie Bars

Ingredients

  • 1/2 cup butter or margarine, melted
  • 1 1/2 cups graham cracker crumbs
  • 1 (14 ounce) can EAGLE BRAND® Sweetened Condensed Milk
  • 2 cups semisweet chocolate morsels
  • 1 1/3 cups flaked coconut
  • 1 cup chopped nuts

Directions

  1. Heat oven to 350 degrees F (325 degrees for glass dish). Coat 13×9-inch baking pan with no-stick cooking spray.
  2. Combine graham cracker crumbs and butter. Press into bottom of prepared pan. Pour sweetened condensed milk evenly over crumb mixture. Layer evenly with chocolate chips, coconut and nuts. Press down firmly with a fork.
  3. Bake 25 minutes or until lightly browned. Cool. Cut into bars or diamonds. Store covered at room temperature.
